Tofu Crumbles with Cilantro Grain and Avocado

Bowls are just an easy option for dinner. Take some sort of seasoned protein, scoop it on top of some grain, add a few choice toppings and serve! Everyone can take as much or as little as they like; everyone leaves the table happy and full. Win!


This one is nice because you can season your tofu even as early as the night before, and when you are ready to bake, it slides in the oven and the grain cooks in about the same amount of time. Everything is ready for the table, without a lot of work on your part ... an especially nice detail after a long day.


Tofu Crumbles with Cilantro Grain and Avocado


Servings: 4-6

Ingredients


Tofu Crumble


3- 12 to 14-ounce blocks extra firm tofu

2 tablespoons soy sauce

1 tablespoon apple cider vinegar

1/2 teaspoon kosher salt

1 clove garlic, crushed

1 teaspoon ancho chili powder

2 teaspoon cumin

1 Tablespoon smoked paprika

2 tablespoons olive oil

1/4 cup pepperocini peppers, snipped

1 can black beans, drained (or use your favorite canned beans)

Cilantro grain

3 1/2 cups cooked grain (like freekah, rice, quinoa, etc) See here for cooking guide for different grains

2/3 cup cilantro, coarsely chopped

Toppings:

shredded cheese

2 avocados, cubed

hot sauce or salsa


Directions:

Tofu Crumbles:

As early as the day before:

Make the tofu crumbles: Drain the tofu containers, then pat the tofu dry with a clean dish towel. You want them to be as dry as you can, pressing out as much water as possible. If you have a tofu press, this is a great place to use it, or you can wrap the blocks in towels, place a heavy plate on top and leave them for 15 minutes.


Once pressed, place the tofu in a large bowl. Add in the soy sauce, vinegar, salt, garlic, ancho, cumin, smoked paprika, and olive oil. Stir in drained beans. Set aside until ready to bake.


When you are ready to bake:


Preheat an oven to 375. Line a baking sheet for easy clean-up, if desired.


Scoop the seasoned tofu mixture onto the prepared baking sheet. Bake in preheated oven 30 - 40 minutes, stirring occasionally, or until browned and fragrant.


Serve with Cilantro Grain


Cilantro Grain

Stir together the cooked grain and the chopped cilantro until well-combined.


To serve: Scoop desired amount of grain into a bowl. Top with tofu crumbles, cheese, avocado, and hot sauce or salsa.
