A's Green Sauce


Green sauce
A tasty sauce that can double as a dip

What's better than a plate of awesome roasted veggies? The natural sweetness of your veggies, enhanced by the magic heat of the hot oven. Now imagine: that same plate with a drizzle of a tangy, herby green sauce, one that makes all foods taste better. This magic sauce works on chicken, fish, meat, tofu ... I'm telling you, this is one of our favorite food toppers right now. And, even better, it comes together in less than 10 minutes.


A’s Green Sauce


Yield: 2 cups


Ingredients


2 tablespoons olive oil

2 red onion, chopped

3 garlic cloves, chopped

1/2 cup Greek yogurt

2 - 3 tablespoons white vinegar

4 teaspoons Dijon mustard

1/2 teaspoon salt

1/4 teaspoon freshly ground black pepper

4 pepperoncini, stem removed

2 cups chopped fresh cilantro leaves and stems, rinsed well

1 cup parsley leaves, rinsed well


Directions


Saute the onion in a small skillet with a drizzle of the oil until soft, 3 to 4 minutes. Add a pinch of salt and garlic, and sauté until soft. Set aside to cool 5 minutes.


Transfer to the blender then add the remaining oil, yogurt, vinegar, mustard, salt and pepper.

Then add the pepperoncini, cilantro and parsley and blend on high speed until the sauce is smooth and creamy, about 30 seconds. You might need to add a bit of water if the blender is struggling to get the ingredients moving.


Taste and adjust salt, pepper and vinegar as needed.


Serve on roasted veg, chicken, grilled anything, or as a dip with fresh veggies or crackers.
