Almond Chocolate Chip Cookies

Take your traditional chocolate chip cookie recipe and swap it all out with great tasting ingredients like almond flour, and -- voila! -- you get this lovely, not-too-sweet very chewy cookie. Could you have it for breakfast? Well, I mean it IS a cookie, but it does have a hefty does of protein and fiber from the almond flour ... I won't tell if you don't!

Almond Chocolate Chip Cookies
Yield: 32 cookies
Ingredients
7 oz unsalted butter melted
1 oz cream cheese, softened
1 cup brown sugar light or dark
1/3 cup granulated sugar
2 large eggs
4 teaspoons vanilla
1 1/2 teaspoon salt
1 ¾ teaspoon baking soda
4 cups almond meal or almond flour
1 cup all purpose flour
400 g chocolate chips or chopped chocolate white, milk and dark
Flaky salt, for baking (optional)
Directions
In a bowl, whisk together the melted butter, cream cheese and sugars for a good few minutes until it’s well-combined.
Add the vanilla and salt, whisk for another minute.
Add the egg, whisk well until light and airy.
Add the baking soda, almond meal and all purpose flour and switch to a rubber spatula to combine. Make sure you smash any clumps of almond flour.
Fold in the chocolate.
Scoop into cookie balls, place on cookie sheet, lined with parchment paper. You can put them close together; you'll move them to bake the cookies. Chill for about 2 hours.
Preheat oven to 350. Prepare two additional cookie sheets with parchment paper. Place cookies on the prepared pan, about 2 inches apart. Flatten the dough ball a bit. Sprinkle with flaky salt, if desired.
Bake for 12 minutes. Remove from oven. Let cookies cool 2 minutes on the pan to firm up a little. Remove cookies to a rack to cool completely. Enjoy!y. Enjoy!
