Chicken Shawarma Hummus Bowl

I know I've shared a number of different options for Shawarma-ing things. This particular version is one of our current favorites because it is highly individualizable (each person assembles their own bowl), can accommodate store-bought ingredients (like hummus) or not, and it is quick to toss together. And, maybe most importantly, it tastes quite good.


Here's a link to my favorite (and easy!) hummus. Definitely, you can sub in your favorite from the store. Please make this easy on yourself!

Also, if you made this with crumbled tofu in place of the ground chicken (probably 3 shelf-stable boxes of extra firm), this could be an amazing vegetarian option.


Chicken Shawarma Hummus Bowl


Yield: 4 - 6 servings


Ingredients


For the Chicken mixture:


2 T olive oil


2 large onions, peeled, quartered and cut into slices

2 cloves of garlic, smashed and finely chopped

1 large zucchini, cut lengthwise into quarters and then cut into 1/4 inch wedges

2 teaspoons paprika

2 teaspoons cumin

1 teaspoon Aleppo pepper

1/2 teaspoon allspice

1/2 teaspoon cinnamon

1/2 teaspoon ground turmeric

2 kg ground chicken


1 teaspoon salt

black pepper


3/4 cup chopped cilantro


For the bowl:


Hummus (make your favorite or store-purchased)

3 English cucumbers, cut lengthwise into quarters, and then cut into 1/4 inch bits

2 tomatoes, cut lengthwise into quarters, and then cut into 1/4 inch bits

pita chips

Directions


In a large sauté pan on medium-high, heat olive oil until shimmering. Add onion and garlic, and sauté until softened. Once the onions are softened, add a small pinch salt and zucchini, and stir well. Cover and cook, stirring occarionally until the veggies are softened and starting to brown.

Add paprika, cumin, Aleppo, allspice, cinnamon, turmeric and stir well. Add ground chicken and stir, breaking up the chunks of meat to start browning. Sprinkle salt and pepper over the pan, stir well, and cover to continue cooking until the meat is fully cooked, and crumbly. Replace lid, remove from heat.


When ready to serve, sprinkle the chicken mixture with cilantro.

To assemble, smear a bit of hummus in your bowl. Scoop desired amount of chicken mixture and spread over the hummus. Add a scoop of cucumbers and tomatoes. Spread pita chips around the bowl, and serve.
