Crispy Gnocchi

Jumping on not one but two bandwagons, here. I know! But these are so so good. In fact, truth be told, when I make these, I make three packages of the gnocchi because the boy herd in the kitchen keeps swiping the crisped ones to the point that we don't have enough for dinner.


These are my favorite ready-to-boil gnocchi . Sure, you could boil them, top them with a nice sauce and enjoy dinner. OR you could toss them with a bit of oil and your favorite seasonings, and let the air fryer do its thing while you prep the rest of the meal. Then, when they are brown and crispy, pile them high and watch how quickly they disappear!


Note: we like these with fairly simple seasonings. You can definitely tailor the seasonings to what type of food you are serving, and use your favorites. Just go lightly, as the toasting in the hot air fryer really enhances the flavors so you don't want to use a lot.



Air-fried Gnocchi


Yield: 4-5 servings


Ingredients


2 packages (roughly 2 pounds) ready-to-boil gnocchi

2 T olive oil

1 1/2 tsp paprika

1/2 tsp Aleppo pepper

1/4 cup grated parmesan, optional

salt and freshly ground pepper to taste


Directions


In a large bowl, combine the gnocchi, olive oil, cheese if using and seasonings. Toss well to coat.


Preheat an air fryer (or convection oven) to 375. Once ready, spread a layer of gnocchi on the rack. Cook for 18 - 20 minutes, stirring once halfway, for until browned and crispy. Serve!

Depending on the size of your air fryer, it may take more than one batch to cook all of the gnocchi. If this is the case, keep the cooked and ready batch in a dish and cover with a paper towel to allow steam to escape (and keep your gnocchi crispy).
