Yep, sharing cookies with you. Likely, you're already being bombarded with cookie options for the holidays. Save these for another day, or add them to your pile to try this year.
This one is a favorite, and has been for a long while. The combination of colored fruit (yes, I know, it is weird to have green cherries; just go with it) and coconut with the toasted nuts ... super tasty. Also why these are favorites: unlike most holiday cookies that are probably a little bit more of a pain in the keister than many others that you might make, these are dead simple.

Cheery Cherry Cookies
Yield: 2 dozen large cookies
Ingredients
1 cup packed brown sugar
3/4 cup butter, softened
1 egg
2 tablespoons milk
1 teaspoon vanilla
2 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 cup quartered candied cherries
1 cup chopped pecans, toasted, coarsely chopped
1 cup coconut (sweetened, or unsweetened, your call), toasted
Directions
Preheat oven to 375.
In a large mixing bowl, cream brown sugar, butter, egg, milk, vanilla, salt and baking soda. (Note: my hand-written note card says to do this by hand. You can definitely do that; I generally use a stand mixer.)
Fold in flour, cherries, pecans and coconut with a wooden spoon.
Using a medium cookie scoop, scoop dough and place onto baking sheets lined with parchment.
Bake for 10-12 minutes or until golden brown. Remove pans from oven and allow to cool just a little before removing them from the pans and cooling completely on a wire rack.
Enjoy!
