Smoky Broccoli

This is one of those recipes that is not really a recipe, more of a suggestion. If you like more of something, or less of something, or don't have it on hand ... change it up.


Smoky Broccoli

Serves 6 as a side


Ingredients

6 cups broccoli florets, roughly 2 medium heads 2 Tbs. extra-virgin olive oil 1 Tbs. fresh lemon juice 1 Tbs. whole-grain mustard

1 tsp smoky paprika salt and freshly ground pepper to taste ¼ cup chopped smoked almonds


Directions

1. Steam the broccoli until bright green but still crisp, 1-2 minutes. Drain well. Alternately, you could roast it in a 375 oven for 30 minutes. Or you can microwave them; just watch to make sure they don't overcook.


2. In a large bowl, whisk together the oil, lemon juice, mustard, paprika and salt. Toss with the warm broccoli.


3. Sprinkle with the almonds.
