Sweet Potato Sheet Pan Bake

I know, I do a lot of sheet pan recipes, but you know what? They are so easy, they let the oven do the work for you, and clean up is a breeze if you line the pans with foil. Plus, these recipes are super easy to scale up or scale down, depending on how many are sitting down to the table with you.


This one is an excellent option for dinner, because potatoes, eggs, sausage (if you're using it), and it's awesome. It's an amazing option for brunch or even breakfast, too, because potatoes, eggs, sausage ... just try it. Also, sweet potatoes roasted are the best thing ever, but especially when you add a bit of spicy with the Aleppo and some eggs ... yum!


Sweet Potato Sheet Pan Bake


Yield: 5 - 6 servings


Ingredients


4 sweet potatoes peeled and cut into 3/4-inch pieces cubed

3 gold potatoes, scrubbed (or peeled) and cut into 3/4-inch pieces cubed

2 red onion, cut in half and then in wedges

3 bell peppers, of different colors if you want, cut into strips

3 tablespoons olive oil

1 /2 tsp salt

freshly ground pepper, to taste

1 package turkey kielbasa, cut into 1-inch chunks optional

8 large eggs

Aleppo pepper

hot sauce for topping


Directions


Preheat the oven to 425 degrees F. Line 2 baking sheets with foil, if desired, for easy clean up. Set aside.


On each baking sheet, combine potatoes, onions, peppers, and garbanzo beans, and toss with your hands to combine. Drizzle with olive oil, and sprinkle with salt and pepper. Toss to combine. Top with kielbasa pieces, and toss again. Slide pans into the oven and roast for 30 - 45 minutes, tossing once during cook time. You want the potatoes to be golden and softening. Cook a little longer if needed!


Meanwhile, crack the eggs into a measuring cup. Set aside.


Once the potatoes are cooked, pull pans out. Make 8 small indentations in the roasted veggies. Add an eggs to each indentation. Sprinkle each egg with a tiny pinch salt, freshly ground pepper and Aleppo, if using. Stick the pan back in the oven and bake anywhere rom 5 to 12 minutes - depending on how cooked you'd like your yolks!


Remove the pan from the oven and serve the potatoes and eggs immediately. Top with hot sauce. Enjoy!
