Thai Chicken Lettuce Wraps

Kids love to eat with their hands. Partly, I am sure, it is that the foods that are so often eaten by hand are 'kid foods' (e.g. pizza, hamburgers, nuggets, etc). Maybe, partly because it is a little bit of 'legal rebellion' that Mom won't frown at, especially if they end up cleaning their plate!

These Thai Chicken Lettuce wraps are fun, super tasty, and everyone around your table can individualize their portions to suit their tastes. Like things a little spicier? Add extra Sriracha. Like extra veggies? Load them on under the ground chicken. Don't like lettuce wraps? Pile it all on your plate and dig in.

Thai Chicken Lettuce Wraps


serves 4 - 6

Ingredients


1 kg lean ground chicken

3 tablespoons soy

1 tablespoon light brown sugar

1 tablespoon rice vinegar

juice of 1/2 a lime

1 T fish sauce

1 tablespoon grated fresh lemongrass

1 fresh garlic clove, crushed

1 T olive oil

1 small onion, quartered and thinly sliced

handful of spinach leaves, coarsely chopped

1/2 cup low sodium chicken broth

1 T cornstarch

2 T oyster sauce


For serving:

julienned carrots

julienned cucumbers

lettuce leaves

sliced green onions

chopped fresh cilantro

sriracha

Quinoa, cooked

avocado, sliced or cubed


Directions


In a small bowl, combine chicken, soy, sugar, rice vinegar, lime juice, fish sauce, lemon grass, and garlic clove. Set aside up to an hour in the fridge.

Heat 1 T olive oil in a 2-inch nonstick skillet with coconut oil and preheat on medium-medium high heat.

Once hot, add the onion, and cook until softened. Once onion is soft, add the the ground chicken mixture. Use a wooden spatula to break it up into crumbles and cook until no longer pink. Add the spinach leaves, and continue to cook until spinach is softened and chicken is cooked.

Meanwhile, combine the chicken broth and the cornstarch.

When the chicken is fully cooked, pour in the broth mixture and increase the heat to high, bringing the sauce to a boil. Once boiling, lower heat and stir in oyster sauce.

To serve, scoop a small amount of chicken mixture into a large lettuce leaf, and top with top with chicken, carrots, cucumbers, etc. Add sriracha over top and enjoy! Repeat!
