Baked Banana Pecan Steel Cut Oatmeal

Nothing says "back to school" like harried mornings, hastily gobbled breakfast and rushing to get clothes on and bags packed. I don't know about you, but this is not the way I like to send my kids out for a long day. Consider this option instead: warm and toasty baked oatmeal (steel cut! Whole grain!) with toasty pecans and bananas. A bowl of this will not only make them happy as they eat it, but it will also stay in their stomachs until lunchtime (and a hastily gobbled sandwich).


Best parts about this recipe: it's more of a formula than a recipe. Make it your own. Use different nuts or fruit. Maybe use honey instead of maple syrup. Add different spices or none at all. Make it nondairy with oat or coconut milk. It's not a complicated formula; plus it's hands-off so once you assemble, the oven does the hard work.


Note: You can make this as soon as you prepare it, or you can prepare it the night before and then bake it in the morning.


Baked Banana Pecan Steel Cut Oatmeal


Yield: 4 - 6 servings

baked oatmeal

Ingredients


1 1/4 cup steel cut oatmeal

1½ teaspoon baking powder

2 teaspoons ground cinnamon

1 teaspoon fine sea salt or kosher salt

3 cups milk, 2% or whole

1/4 cup maple syrup

2 large eggs

2 tablespoons unsalted butter, melted and cooled slightly

2 teaspoons vanilla extract

2 bananas, halved lengthwise and sliced

1/2 - 3/4 cup pecans or walnuts (or your favorite), toasted and coarsely chopped


Directions


Preheat the oven to 350ºF. In an 8- or 9-inch baking pan, mix together the oats, baking powder, cinnamon, and salt.


In a medium bowl, whisk together the milk, maple syrup, egg, butter, and vanilla. Pour the milk mixture over the oat mixture, and stir well to mix.


Sprinkle banana slices and nuts over the top of the mixture. If baking at once, slide the pan into the oven and continue as directed. If refrigerating overnight, cover and slide into the fridge until ready to bake.


Transfer pan to the oven and bake for 60 to 70 minutes minutes, or until the top is golden and the oat mixture has set. Remove from the oven, and allow to cool for a few minutes before serving. Enjoy!
